I've got the encoder problem solved. Also I meant the actual encoder itself is called libmp3lame not the package. So in the script I changed acodec-mp3 to acodec-libmp3lame. The actual package that I installed from the repos were the libavcodec-extra packages. (There's also a bunch of other libav*-extra packages I installed too) I think in Ubuntu this may not installed by default because of licensing issues or whatever. Installing these provided the x264 encoder for ffmpeg.

Some videos I had problems with during the actual encoding process. Below is the error message I get when I try to set the aspect ratio. This happens on HD videos that I got from youtube.

ffmpeg Last message in /tmp/ffmpeg.10503:

After some playing around with I noticed that there are libavcodec-extra packages in the Ubuntu repositories which package more codecs that are necessary.

Another problem came up though which is some codecs are named differently in these packages.
Example: the mp3 codec is not just 'mp3' it's called 'libmp3lame'. - Oct 31 2009

It just gives me this error:
Unknown encoder 'libx264'

I have libx264-67, libx264-dev and x264 install. I am running Ubuntu 9.10.
There doesn't seem to be anyother pacakges related to an x264 encoder. - Oct 31 2009

Very clean and simple.
I like the colours. Some themes attempt to use too much colour and it becomes hard on the eyes.
i.e. Too much grey or some off white colour in attempt to look more elegant or something. - May 29 2007
